Seydelmann's butcher slicers comprise a range of high-performance machines designed for optimal performance across a variety of capacities.
The high-efficiency cutters, available in sizes from 40 to 120 liters, allow for rapid chopping and homogeneous mixing, and are made from durable stainless steel.
Vacuum cutters, with 60 and 120-litre bowls, remove air during the cutting process, thereby extending shelf life, improving sausage color and enhancing the texture and flavor of the emulsion.
Cooking trimmers, also available with 60 and 120-litre bowls, allow for trimming and cooking in one step, saving production time and preserving flavor, aroma and protein.
Vacuum-cooking cutters combine both functions for greater efficiency and higher product quality.

Industrial Cutters

Seydelmann's industrial cutters offer a wide range of high-performance machines designed for industrial use.
High-efficiency cutters, available with vessel capacities from 200 to 750 litres, ensure superior material chopping and emulsion mixing, optimising water uptake and reducing the need for seasonings. The durable stainless steel construction further enhances the machine's longevity.

Vacuum cutters, with vessel sizes from 200 to 1000 litres, remove air during the cutting process, extending shelf life and improving emulsion quality by trapping fine cell aggregates.

Cooking-cutting machines, also available with vessels from 200 to 1000 litres, combine cutting and cooking in one step, thereby preserving flavour, aroma and protein, while simultaneously reducing bacterial content.

Vacuum-cooking slicers combine both functions to provide greater efficiency and a higher quality product.

A special model, the Bi-Cut K 552 for dry sausages, with two offset knife shafts, enables homogeneous cutting and mixing, providing significantly greater processing efficiency compared to conventional machines – with minimal additional space requirement.

 

Grinding

Industrial Meat Grinders

Industrial meat grinders by Seydelmann represent a versatile range of machines designed to meet a wide spectrum of needs in food processing.

Universal grinders mark a major technological advancement—they use the same feed screw and cutting set to achieve optimal cutting with efficient hourly output. These machines easily process fresh meat, cooked meat up to 85°C, skins, fat blocks, frozen meat down to -25°C, and various food products, regardless of their consistency and temperature. Products of different consistencies, such as fresh and frozen ingredients, can be processed simultaneously or alternately—completely without interruptions.

Automatic grinders, equipped with two-speed or three-speed drives for the working and feed screws, allow separate speed control, ensuring precise material processing.

The automatic K grinders are specifically designed for the dairy industry—primarily cheese and butter—and are equipped with a feed screw with crushed teeth, which increases product retention and enables easy backward correction of the material.

Seydelmann automatic mixing grinders integrate grinding and mixing functions, offering a mixer with spiral or paddle blades, with two forward speeds and two reverse speeds—an ideal solution for applications requiring pre-mixing before grinding.

Mixing grinders, with strong arms or paddles in the mixer, allow combining materials with ingredients and spices before grinding, ensuring uniform mixing, aided by a two-speed working screw and short reverse operation.

Finally, frozen meat grinders are designed for precise comminution of whole blocks of frozen meat, with a powerful drive, feed screw, and cutting set. An additionally reinforced motor enables perfect cutting even at -25°C. During initial processing, the feed screw in the hopper peels approximately 8 cm of meat from the frozen block with each rotation before transferring the material to the cutting set.

They feature a robust drive, work worm, and knives, with an extra powerful motor ensuring a perfect cut even at -25°C. The initial cutting in the hopper by the work worm effectively peels about 8 cm from the frozen block with each rotation before transporting the material to the knife set.

Seydelmann Konti-Kutters

Seydelmann Konti-Kutters, including the Konti-Kutter (KK) and Vacuum Konti-Kutter (KKC), are advanced emulsifiers featuring unique technology. Unlike conventional systems, these machines use vertically arranged perforated and cutter plates that rotate without contact, minimizing friction and preventing contamination of the emulsified product.

The Konti-Kutter produces fine emulsions with coarse particles in a single step, while the Vacuum Konti-Kutter additionally enables vacuum comminution, reducing contamination risk, extending shelf life, stabilizing product color, and improving protein breakdown.

Both machines offer flexibility in achieving various emulsion fineness levels, depending on the number and size of the perforated and cutter plates used.
